Specialty coffee evangelists have their reasons: the reason these establishments have taken over cities across Spain.

With the help of small entrepreneurs who believe there's still room to grow, the sector began to gain traction more than 10 years ago. The promise of business is starting to attract larger companies. At the counter of Baburu Café, on a Saturday morning, there's a line of fewer than ten people, and Óscar Alonso, the owner, along with his partner, works diligently to serve them. Every time they fill an order, a new customer joins the waiting list. "I think there could easily be two or three more specialty coffee shops like his in Zamora," he says about these intense minutes, which, he says, are not the norm. "Maybe I'll open them myself," he adds enthusiastically. His shop, the only one of its kind in the city, is one of the small segments of the wave that has swept through the streets, mainly in the largest cities, in recent years. The sector, in general, still sees room for expansion; however, it also anticipates some kind of correction in a segment that is no longer exclusive to small entrepreneurs and coffee enthusiasts.
